Ingredients

  • ¾ lbs. broiled salmon, chopped & crumbled OR
  • ¾ lbs. fresh salmon, skin removed and chopped coarsely
  • 1 egg
  • 1 scallion, chopped
  • to 1/2 cup panko or fine bread crumbs
  • 1 tablespoon dried onion
  • 1-½ tablespoon white worcestershire sauce
  • ½ teaspoon Herbs de Provence or 'Pinch of Herbs'
  • salt & pepper to taste
  • 1 to 2 tbsp olive oil, enough to make the mixture stick together

Directions

Mix all ingredients together, adding enough panko to get it to hold together nicely. Fresh salmon requires more panko and no olive oil. Form two patties and saute over medium heat in olive oil, 2 to 2-1/2 minutes per side. Serves two.
