Ingredients

  • 1 lb. bay or sea scallops
  • 2 small lemons
  • 1 tablespoon margarine or butter
  • ¼ cup chicken broth
  • ¼ cup dry white wine
  • ½ teaspoon salt
  • 2 tablespoons chopped parsley

Directions

1. Juice one of the lemons, and thinly slice the other to use as a garnish. Rinse the scallops, and slice in half horizontally if using large sea scallops.
2. Sauté the scallops for about 5 minutes in the butter, then remove and set aside on a warm serving platter. Add lemon juice, chicken broth, wine, salt and parsley to skillet, and reduce over high heat to make a sauce. Spoon over the scallops, garnish with lemon slices and a little extra parsley.
