Ingredients

  • 1-½ lbs. brussell sprouts, shredded
  • ¼ cup pine nuts, toasted
  • ¼ cup parmesan, shredded
  • 1 lemon, juice and zest
  • 2 tbsp olive oil
  • salt
  • pepper

Directions

1. Prep: Chop the brussels sprouts into thin slices so they shred. Toast the pine nuts and set aside. Zest the lemon, and set aside.
2. Sauteé and combine: Sauté the brussels sprouts over low heat to break them down and caramelize, about 10 minutes. Combine with the rest of the ingredients, including half of the parmesan, salt and pepper to taste, and serve warm with parmesan on top.
