• 1-¼ lb. large shrimp
  • 1 medium bunch spinach
  • 2 medium tomatoes
  • 1 clove garlic, minced
  • olive oil
  • salt
  • 1 tablespoon chopped parsley
  • 1 tablespoon lemon juice
  • ½ teaspoon lemon-pepper seasoning


Peek and devein shrimp. Discard stems from spinach, and chop coarsely. Cut tomatoes in half and squeeze to remove seeds. Chop into 1/2" chunks.

Preheat oven to 450°F. Combine spinach, tomatoes, 1/2 tsp salt and 1 tbsp olive oil in large bowl and toss to coat. Place in four 1-1/2 cup shallow casserole dishes. In same bowl, combine shrimp, garlic, parsley, lemon juice, lemon pepper, 1 tbsp olive oil and 1/2 tsp salt, and toss to coat. Arrange shrimp mixture over spinach mixture, then bake 12-15 minutes until shrimp are cooked through.
