Another very quick dinner for guests. Serve with lighter side dishes, like rice pilaf and a green salad.

Ingredients

  • ¾ lbs. peeled and deveined large shrimp
  • 2 tablespoons flour
  • ¼ cup olive oil
  • 1 shallot, diced
  • 1 garlic clove, diced
  • Juice of 1 small lemon
  • cup white wine

Directions

Heat the olive oil near smoking in a 12" skillet. Toss the shrimp in the flour to coat them, then add to the skillet and cook for 1-1/2 minutes on one side until brown. Turn the shrimp, add the shallots and garlic, cook for 1 minute, then deglaze the pan with the lemon juice and wine. Reduce briefly until sauce just starts to thicken. Serve the shrimp with the sauce over rice.
